Cheesy Garlic Stuffed Mushrooms on baking sheet

Mushrooms... either you love them or hate them.

I absolutely LOVE them, but only fresh and never canned.

My cousin loved canned mushrooms growing up. She would literally walk around with the can and eat them just like that. I would never eat them and she always tried to convince me to try them with the promise that I'd develop super powers after. Well I did try one, hated it and never got my super powers.

I'm pretty sure my dislike came from the fact that they were canned, because I absolutely love any kind of fresh or dried mushroom. 

Today's Cheesy Garlic Stuffed Mushrooms are a terrific party food, or if you're like me, you'd even eat them for a meatless lunch or dinner.

The three cheese combo, along with garlic and some other spices, make each bite so flavorful and creamy!

You can use almost any cheese you prefer, and switch it up between baby bellas and white mushrooms depending on your mood, a sale or whatever you have on hand.

I love that these can be made with basic, affordable ingredients and can be ready in about 30 minutes.

What are the ingredients in this recipe?

  • Cream Cheese: It's been around since the 1800's and was produced mostly in Philadelphia. You can use store bought like I did or homemade. I love the versatility, and that you can use it in sweet or savory recipes.
  • Parmesan cheese: aka Parmigiano-Reggiano. It's a hard, Italian cheese that's aged from 12-36 months. I absolutely love shredded and shaved and use them daily in pastas, salads, garlic breads and more!
  • Garlic: My love for garlic is real. I use it in almost everything I cook and I love the health benefits it offers. Garlic is part of the onion, leek and chive family. It's great for heart health and contains many vitamins and minerals.
  • Portobello mushroom: These mushrooms are large in size and have a rounded, flat cap that is connected to a thick stem. When cooked, portobello mushrooms have a chewy and beefy meaty texture and a smoky, earthy flavor. When they are not fully grown, Portobellos are picked as a white round, button-shaped mushroom and referred to as Crimini, Bella or Baby Bella. 
  • Fresh parsley: This herb is not just a garnish! It has a robust, fresh flavor and is great in salads, sauces, marinades, soups and more! It has vitamin k which is needed for blood and bone health.
  • Butter: A dairy product consisting of approximately 80% butterfat and made from the fat and protein components of milk or cream. Most commonly made from cow's milk, but can also be made from sheep, goat, yak, or buffalo milk.
  • shredded cheddar cheese
  • dried basil 
  • dried parsley flakes 
  • seasoned bread crumbs 
  • fresh parsley


Recipe tips:

  • Wipe mushrooms with a damp paper towel instead of washing or soaking to prevent mushrooms from getting soggy.
  • If you love mushrooms, keep the stems in a freezer bag with other vegetable scraps to make a delicious vegetable broth.
  • These stuffed mushrooms can be made one day in advance. Prepare mushrooms as directed, saving the breadcrumb step for the day of, cover, and refrigerate. When ready to bake, complete the breadcrumb step, follow the cooking instructions, adding 5 minutes to the cook time.
  • Reheat stuffed mushrooms in the oven on a baking sheet at 375 degrees F for 10-15 minutes, or until heated through.

  • Preheat the oven
  • Spray a large baking sheet with cooking spray or line with parchment paper
  • Clean mushrooms, removing stems and place on baking sheet 
  • In a bowl, cream together cream cheese, parmesan cheese, shredded cheese, garlic, basil and parsley until well combined
  • Spoon mixture into each mushroom cap
  • In a microwave safe bowl, melt butter
  • Stir in bread crumbs until completely combined
  • Sprinkle each mushroom with bread crumb mixture
  • Bake until cheese is melted and browned and the mushrooms are cooked through
  • Garnish with fresh parsley if desired
