Peach Rhubarb Lemonade is the perfect balance of tart and sweet, making it incredibly refreshing on a warm day. Juicy peaches bring natural sweetness, while fresh rhubarb adds a bright, tangy flavor that pairs beautifully with freshly squeezed lemon juice. The combination creates a vibrant, fruity lemonade that feels a little extra special compared to the classic version.

Made with simple ingredients like frozen peaches, rhubarb, sugar, lemon juice, and water, this drink is easy to prepare and full of fresh flavor. It’s perfect for summer gatherings, backyard BBQs, or just a relaxing afternoon on the patio. My friend Shannon and I even tried it with a splash of club soda for a fun, bubbly version, and another day I added a shot of vodka, honestly, it’s so good any way you serve it.

Recipe tips and substitution ideas:


  • For the best flavor, let the peach rhubarb mixture simmer until the fruit is fully broken down, this helps extract as much flavor as possible. You can use a potato masher to help this process. Press firmly when straining to get all the juice out, but don’t force too much pulp through if you want a smoother lemonade. Taste before serving and adjust the sweetness or tartness with a little extra sugar or lemon juice if needed.
  • Chill the lemonade well before serving so it’s extra refreshing, and serve over plenty of ice. This lemonade is great served with club soda, lemon lime soda, vodka or champagne! For a pretty presentation, garnish with lemon slices, peach slices, or even a small sprig of mint or stalk of rhubarb.
  • Don’t throw away the leftover pulp after straining! It makes a delicious topping for ice cream or can be stirred into hot oatmeal, overnight oats, chia pudding, or similar dishes for extra flavor.
  • You can use thawed frozen rhubarb or fresh peaches in this recipe. For a shortcut, substitute store-bought lemonade in place of homemade, I recommend Simply Lemonade. Feel free to use other sweeteners of your choice as well. Berries are a great substitution for peaches in this recipe too.

Peach Rhubarb Lemonade

This fruity lemonade combines juicy peaches and tangy rhubarb for a vibrant, refreshing drink. Serve it over ice or add soda for a fun twist.

Ingredients

  • syrup:
  • 1/2 pound frozen peaches, thawed
  • 2 cups rhubarb, cut into 1/2 inch pieces
  • 1/2 cup granulated sugar
  • 3 tablespoons fresh squeezed lemon juice
  • lemonade:
  • 1 cup fresh squeezed lemon juice
  • 3 cups water
  • 3/4 cup granulated sugar

Instructions

  1. For the Syrup:
  2. In a small saucepan, combine the peaches, rhubarb, sugar, and lemon juice.
  3. Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 10-15 minutes, stirring occasionally and breaking up the fruit as it softens.
  4. Continue cooking until the mixture has broken down and becomes thick and saucy. Remove from heat and allow to cool.
  5. Once cooled, pour the mixture through a fine mesh strainer set over a bowl. Use a spatula to press the mixture and extract as much juice as possible. Keep or discard the solids.
  6. For the Lemonade:
  7. In a large pitcher, combine the lemon juice, water, and sugar. Stir until the sugar is fully dissolved.
  8. Add the peach rhubarb syrup and stir until well combined.
  9. Serve over ice.
