
I recently picked up the "Recipe Girl" cookbook at my local library, and I was super excited to page through and check out all of the great recipes! The first recipe in the book was for this Pumpkin Spice Latte, and it immediately caught my eye! You see, I've had an espresso machine on my wishlist for a long time, but it's not something I've ever been able to purchase, since the one I want is spendy! That's why this recipe is so perfect! Latte with regular coffee and pumpkin?? I'm in!
I made this recipe earlier this week when my daughter and I were stuck at home with strep for a few days. It was so easy to make, and it's the perfect warm drink to comfort you when you're feeling under the weather.
The Recipe Girl cookbook is 336 pages long and plump full of great recipes! Some other recipes I'd like to try are: Sticky Sweet Chicken Wings, Homemade Enchilada Sauce and Mango Margaritas! There is definitely something for everyone! Check it out!
Pumpkin Spice Latte (click here to print recipe)
What you need:
1/2 cup 1% milk
1 tablespoon unsweetened pumpkin puree
1 teaspoon light brown sugar
1 teaspoon vanilla
1/4 teaspoon pumpkin pie spice
1 cup hot, brewed strong coffee
2 tablespoons half and half
1 teaspoon sugar plus more to taste
whipped cream
sprinkles, cinnamon or nutmeg for topping
Directions:
In a microwave safe bowl or cup, whisk together the milk, pumpkin, brown sugar, vanilla and pumpkin pie spice. Microwave for 1-2 minutes, watching closely. Remove from microwave when it's hot and frothy.
Pour the milk mixture into a tall mug. Add the hot coffee, half and half and sugar. Mix to combine. Taste, add more sugar, if needed. Top with whipped cream and sprinkle with the sprinkles, cinnamon or nutmeg, if desired.
