Tender chicken cutlets are coated in a flavorful Parmesan and breadcrumb crust, then roasted alongside garlic seasoned red potatoes and fresh green beans. Everything cooks together on one pan, creating a complete meal with minimal prep and even less cleanup.

The chicken turns out crispy on the outside, juicy on the inside, while the potatoes become golden and tender and the green beans roast to perfection. The combination of garlic, Parmesan cheese, olive oil, and simple seasonings gives every bite plenty of flavor without requiring a long list of ingredients. It's a family friendly dinner that's hearty, satisfying, and easy enough to add to your regular meal rotation.

Recipe tips and substitution ideas:


  • For the crispiest chicken, pat the chicken cutlets dry before coating them in the Parmesan breadcrumb mixture. Freshly grated Parmesan works best because it melts and browns better. Try to cut the potatoes into similar sized pieces so they cook evenly, and don't overcrowd the pan, giving everything a little space helps the vegetables roast instead of steam.
  • Using chicken cutlets helps everything finish cooking at the same time, but if you're using thicker chicken breasts, you may need to pound them to an even thickness or adjust the cooking time. If you'd like extra browning on the chicken, place the pan under the broiler for the last 1-2 minutes of cooking. Be sure to cook the chicken to an internal temperature of 165°F for the best results.
  • You can easily customize this sheet pan dinner with ingredients you already have on hand. Chicken breasts, chicken tenders, or boneless skinless chicken thighs can be used in place of chicken cutlets. If you don't have red potatoes, try Yukon Gold, baby potatoes, sweet potatoes, or even chunks of butternut squash. Broccoli, asparagus, Brussels sprouts, carrots, or zucchini are all great substitutes for the green beans.
  • For the coating, Panko breadcrumbs can be used for extra crunch, and Pecorino Romano is a delicious substitute for Parmesan cheese. You can also add extra seasonings like Italian seasoning, paprika, onion powder, or lemon pepper to the breadcrumb mixture for a different flavor profile. For a gluten free version, use your favorite gluten free breadcrumbs, and for extra richness, finish everything with a squeeze of lemon juice or a sprinkle of fresh parsley before serving.

Parmesan Crusted Chicken Sheet Pan Dinner

Tender chicken cutlets coated in Parmesan and breadcrumbs are roasted alongside garlic potatoes and fresh green beans. A simple, flavorful dinner the whole family will enjoy.

Ingredients

  • 1 1/2 pounds chicken cutlets
  • 5 tablespoons extra virgin olive oil, divided
  • 5 cloves of garlic, minced, divided
  • 1 cup grated parmesan cheese, divided
  • 1/2 cup breadcrumbs
  • 1 1/2 teaspoons salt, divided
  • 1 1/2 teaspoons black pepper, divided
  • 2 pounds red potatoes, cut into 1 inch cubes
  • 1 pound fresh green beans, ends trimmed

Instructions

  1. Preheat the oven to 375°F. Line a large baking sheet with aluminum foil and coat with nonstick cooking spray.
  2. In a large bowl, combine the potatoes, 2 tablespoons olive oil, 2 cloves minced garlic, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Toss until evenly coated.
  3. Spread the potatoes on one end of the prepared baking sheet. Bake for 15 minutes.
  4. While the potatoes are baking, prepare the chicken. In a shallow dish, combine 1/2 cup grated Parmesan cheese, 1/2 cup breadcrumbs, 2 cloves minced garlic, 1/2 teaspoon salt, and 1/2 teaspoon black pepper.
  5. Brush or toss the chicken breasts with about 2 tablespoons olive oil. Press each chicken breast into the Parmesan breadcrumb mixture, coating both sides evenly. Set aside.
  6. In a medium bowl, combine the green beans, 1 tablespoon olive oil, 1 clove minced garlic, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Toss until coated.
  7. Remove the baking sheet from the oven after the potatoes have baked for 15 minutes. Arrange the coated chicken breasts and seasoned green beans on the pan alongside the potatoes.
  8. Sprinkle the remaining grated Parmesan cheese over the chicken, potatoes, and green beans.
  9. Return the baking sheet to the oven and bake for an additional 20–25 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are tender.
