Open Face Avocado, Roasted Portobello and Fried Egg Sandwich Recipe

Hearty and delicious meatless breakfast that's also great for dinner!



I hope all of you here in the US had a great Memorial day! It was nice to take a break from the blog for a few days and spend time with my family and friends!

We went to a huge flea market on Saturday and found some pretty fun stuff, including a case of fresh cherries and strawberries! So delicious! We were pretty lazy on Sunday and since it was raining my daughter and I had a Skip-Bo marathon! She is a pro at that game already and is totally addicted! We had friends over for dinner yesterday and enjoyed another rainy day at home!

This weekend I also decided to pull the plug on our cable! I received a bill from Charter for $150 and for only having one receiver, basic cable and internet, it wasn't worth it anymore! We love Netflix and now have Hulu Plus, so we aren't missing cable at all, plus it gives us more time to play games and spend some extra quality time with each other! Have any of you pulled the plug on cable?

Now onto today's delicious breakfast recipe! How many of you are mushroom lovers? I love any type of mushrooms and often substitute them for meat in some recipes such as this one! We also love avocados, so this breakfast is perfect! 

This open face sandwich packs tons of flavor and is hearty enough to fill you up! You can always add the extra slice of bread and make it a complete sandwich! Also if you're like us, you'll have it for dinner instead of breakfast! We love breakfast at dinnertime!

Open Face Avocado, Roasted Portobello and Fried Egg Sandwich

Ingredients (2 sandwiches)
  • 2 teaspoons olive oil
  • 8 ounces baby bellas, sliced
  • 1-2 small avocados
  • 2 slices sourdough bread
  • 2 eggs
  • salt and pepper, as needed
Instructions
Preheat oven to 375 degrees.
Coat the bottom of a glass baking dish with olive oil. Add sliced baby bellas, season with salt and pepper. Roast in the oven for 20 minutes, remove drain excess liquid and set aside.
Mash avocados in a bowl, season with a dash of salt and pepper.
Toast the bread.
Meanwhile, cook eggs to your preference. I made mine over easy.
Spread the mashed avocado on the toasted sourdough. Top with baby bellas, then the egg. Serve immediately.

  2. We changed cable service and are saving $100 per month. I would completely get rid of it in a heartbeat, but my husband is a sports fanatic and Jeopardy fan :) Now this is a sammie that I could eat for breakfast, lunch or dinner! Yum!

  5. Oh my goodness! This breakfast sandwich looks and sounds amazing! :) I wish this is how I would have started out my day today.
    And cable is so expensive, but we will never get rid of it because my husband is addicted to Pirates baseball, lol. ;)
