My eight year old has been a somewhat picky eater these last few years. 

It's been a struggle getting her to try new things and when she does, she doesn't like any of them. She came to me the other day and expressed how much she'd love to help in the kitchen with prep and cooking. I can't even begin to tell you how excited that made me! She started paging through some cookbooks for meals she might like, and today's recipe was created using some recipe ideas she found.

This recipe has tons of flavor from the garlic, basil and sesame oil. It's ready in the amount of time it takes the pasta to cook, which makes it perfect for meatless lunch or a quick dinner! 

This can be served as a side with your favorite protein or a meatless main dish. If you don't want a big batch, cut the recipe in half for a smaller amount.

Garlic and Basil Sesame Noodles

Ingredients

  • 1 - 16 ounce box thin spaghetti
  • ⅓ cup low sodium soy sauce
  • 2 tablespoons granulated sugar
  • 4 cloves garlic, grated
  • 2 tablespoons seasoned rice vinegar
  • 1 ½ tablespoons sesame oil
  • 4 tablespoons olive oil
  • 6 large fresh basil leaves, chopped
  • ½ teaspoon crushed red pepper
  • 3 large green onions, thinly sliced

Instructions

  1. Cook pasta to al dente according to package directions.
  2. Meanwhile, in a large bowl, whisk together the soy sauce, sugar, garlic, rice vinegar, sesame oil, olive oil, basil and crushed red pepper until combined.
  3. When the pasta is cooked, drain, then add the pasta to the bowl with the sauce. Toss until the pasta is completely coated and sauce is absorbed.
  4. Top with green onions and serve immediately.

Notes

Refrigerate leftovers in an airtight container for up to three days.

  6. Made this tonight. Was a little oily so next time I will reduce olive oil. I used this as a side dish so halved all ingredients. My husband and I liked this, however our 12yo wasn't overly keen. Still, I will make this again maybe with a couple of small changes. Thanks for a lovely recipe.
