This summer is flying by too fast!

Our weekends are booked through Labor Day, and the past few weekends have been spent by the lake, eating good food and making SO many new memories!

My little sisters bachelorette party was last weekend and it was such a fun night out. We had a wonderful dinner, lots of delicious drinks and danced the night away at a club on the lake!

While us sisters were celebrating, my daughter spent the night with her uncle at the camper! They ended up catching 25 sunfish that we ended up eating for lunch the next day.

There's really nothing better in life than fresh Minnesota fish fried up outside near the lake! I ate way more than my share and it was too good!

We've also spending a lot time in the community garden at my job and brought home some delicious kale a few weeks ago!

I've been waiting to share this with you since I first made it, but you know life gets in the way of posting new recipes sometimes so here we are!

We love to use spinach in the place of kale, fresh tomatoes instead of sun dried or spaghetti noodles instead of macaroni.

The possibilities are endless and the sauce goes wonderfully with any of those options.

If you prefer adding meat, leftover rotisserie chicken or cooked shrimp are a delicious addition.

I brought leftovers to work for my co-workers to try, and they all really liked it. 

If the leftovers are good, then you know it's awesome fresh out the pot!

Creamy Garlic Parmesan Kale Macaroni

Ingredients (4 servings)
Instructions
Cook macaroni al dente according to package directions. Drain and set aside.

Meanwhile, add butter and olive oil to a large skillet and heat over medium.

Add the garlic and onion, saute 3-4 minutes. Add the kale and sun dried tomatoes and saute for another 4-5 minutes.

Sprinkle the flour over top, stir until combined, cooking 1 minute. Add the milk, bullion paste, parsley, basil and oregano and whisk until combined. Heat for 3 minutes until sauce starts to thicken.

Add the parmesan cheese, salt and pepper, stir and remove from heat. Serve with extra chopped parsley and parmesan cheese over top.
