Thanksgiving for us has finally come to an end!

We had a meal at my sister's house on Thursday, and then again at my Dad's house today. My belly is still full and I'll be hitting the gym extra this week to make up for all the deliciousness!

In addition to all the Thanksgiving meals, I just got done eating my way through Maryland and Washington DC!

I went on a mini vacation with some friends for a birthday celebration and spent four days trying new restaurants, and some old favorites too.

We had seafood in Bowie, MD, unique diner food in Waldorf, MD, Chili Dogs in DC, Italian food in Baltimore and SO much more!

Today's recipe for Salmon Macaroni Casserole is pure, old school comfort food!

I grew up on cream of something soup casseroles and Minnesota "hotdishes" and they always remind me of meals with my family!

When I had some salmon leftover after dinner a few weeks ago, I decided to use it and create a whole new and delicious dinner.

We usually have cooked macaroni in the fridge since my daughter loves her buttered noodles as a snack after school.

If you have cooked macaroni and cooked salmon, it cuts down prep time and you can have this in the oven in no time!

If salmon isn't really your thing, use tuna! I always love a good tuna casserole.

With these ingredients and the delicious garlic butter crouton topping, you will have a tasty and easy weeknight or weekend dinner!

The leftovers are great too! I love taking leftovers to work so I don't get tempted to spend money on lunch out at a restaurant.

Salmon Macaroni Casserole

Yield: 6 servings

ingredients:

  • 8 ounces elbow macaroni
  • 1/4 cup onion, finely diced
  • 1/2 cup shredded carrots
  • 1 cup frozen peas, thawed
  • 8 ounces cooked salmon, flaked
  • 1 cup shredded sharp cheddar cheese
  • 1- 10 1/2 ounce can cream of mushroom soup
  • 1 soup can of milk
  • 1/4 cup mayo
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup crushed garlic butter croutons

instructions:

  1. Preheat oven to 350 degrees.
  2. Cook pasta according to package directions. Cook to al dente, make sure not to over cook.
  3. Combine all ingredients except crushed croutons in a large bowl. Pour into a greased 2 quart baking dish.
  4. Top with crushed croutons and bake for 30-40 minutes until bubbly.
  5. Serve with chopped fresh parsley, optional.
