We absolutely love orzo at our house!
Orzo is a tiny pasta shaped pasta also known as risoni. It's shaped similar to a grain of rice. Orzo is a great pasta to use because it soaks up the flavors of whatever you're cooking it with.
This Creamy Mushroom and Spinach Orzo is loaded with tons of flavor. It's simple to make, ready in about 30 minutes and the leftovers are great for lunch the next day.
I love mushrooms and spinach together. They both have such hearty flavors and both go so well the parmesan cheese and orzo.
This pasta is great for any day of the week. You can serve it as a side dish for pretty much any protein or as a meatless main dish.

Creamy Mushroom and Spinach Orzo
Ingredients
- 2 tablespoons olive oil
- 8 ounces white mushrooms, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cloves garlic, minced
- 2 cups orzo
- 2 cups chicken broth
- 2 cups milk
- 2 cups fresh baby spinach
- 1 cup grated parmesan cheese
Instructions
- In a large skillet or pot, heat olive oil over medium high heat.
- Add mushrooms, salt and pepper and saute for 5 minutes.
- Add in garlic and orzo, saute for 2 minutes.
- Stir in broth and milk.
- Bring to a boil, reduce heat and simmer uncovered for about 10 minutes until orzo is tender.
- Add spinach & parmesan, remove from heat and stir until spinach is wilted and parmesan is melted.
- Serve topped with additional parmesan cheese, if desired.
Notes
