If you're a fan of Tik Tok, then you may have seen these tasty fruit roll ups with ice cream! I had a feeling these would be a hit with my girls, so we had to give them a try. The crunchy texture from the hardened fruit roll up along with the creamy vanilla ice cream is delicious.

Be prepared, they are messy, so it's a perfect snack or dessert for when you're playing outside. That way if the ice cream drips everywhere, you don't have to worry about cleaning it up. These are not a snack for a car ride or for relaxing on the couch. If you eat these indoors, serve them at the table with a plate so the mess is contained.

Even though they're messy, they're fun and totally worth every messy drip!

You can add or substitute with these ingredients:

  • use any flavor ice cream instead of vanilla
  • use any flavor fruit roll ups or homemade fruit roll ups

Recipe tips:

  • Do not make these in advance. They will turn sticky and messy. Make just before serving.
  • Make these with ice cream straight from the freezer. If your ice cream is partially melted, it will make it hard to fold them.
  • The fruit roll up will get hard and break easily once the ice cream is added. This is because it cools it significantly. It makes it easier to bite and is normal.
  • These don't take much ice cream, so smaller containers of ice cream should work for an entire box of fruit roll ups.

Ice Cream Fruit Roll Ups

Ingredients

  • 1 Rainbow Fruit Roll Up
  • 1 Scoop Vanilla Ice Cream

Instructions

  1. Carefully roll out the fruit roll up and lay it flat on top of the plastic you unwrapped it from.
  2. Using a 1-inch cookie scoop or something similar, place a dollop of ice cream in the middle of the roll up.
  3. Using something with a flat bottom, lightly flatten the dollop of ice cream.
  4. Lastly, fold the fruit roll up over the ice cream like you would the top of a box. Fold it in on the sides then fold in the top and bottom last.
  5. Eat immediately!
