Cookies are our go to sweet snack at home, and there’s almost always a batch baking a couple times a week. These Red Velvet Cake Mix Cookies have become a regular because they’re easy, fun, and totally customizable. We love how simply switching the cake mix creates a whole new flavor, and sometimes we skip the sprinkles or swap them for a color that matches the cake mix we’re using. Perfect for holidays, birthdays, or just because.

The cookies bake up super soft, sweet, and just the right size for an afternoon treat or after dinner dessert. Frosting them is always a hit around here, and they stay soft for several days when stored in an airtight container (if they last that long!). This recipe is also perfect for getting kids in the kitchen, measuring ingredients, practicing a little math, and reading the recipe together makes baking these cookies just as fun as eating them.

Recipe tips and substitution ideas:


  • For best results, avoid overmixing the dough, stir just until the cake mix is fully incorporated to keep the cookies soft and tender. Slightly underbaking helps maintain that fluffy, cake like texture, as the cookies will continue to set as they cool. If the dough feels too sticky, chilling it for 15-20 minutes makes scooping easier. You can also gently press the tops with a glass or your fingers before baking for more even cookies, and lining the baking sheet with parchment helps prevent browning on the bottoms.
  • Store the cookies in an airtight container for up to 3 days. If you prefer frosted cookies, bake as directed, allow the cookies to cool completely, then frost. Cream cheese frosting is our favorite.
  • You can use any flavor of cake mix to switch things up or roll the dough in sanding sugar before baking for a crunchy, sweet coating. You can mix in white chocolate, dark chocolate, or milk chocolate chips, or add mini chocolate chips for more even bites. Chopped Oreos make a fun texture boost, while crushed peppermint works great for holiday versions. Swap vegetable oil for melted butter for a richer flavor, or add a splash of vanilla or almond extract to enhance the cake mix. For a festive twist, fold in chopped nuts, toffee bits, or mini marshmallows, or sandwich the cookies with frosting to turn them into easy cookie sandwiches.

Red Velvet Cake Mix Cookies

These Red Velvet Cake Mix Cookies are soft, sweet, and incredibly easy to make with just a few ingredients. Perfect for quick treats, parties, or baking with kids.

Ingredients

  • 1 - 15.25 ounce box red velvet cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/3 cup miniature heart sprinkles

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, combine the cake mix, eggs, and vegetable oil.
  3. Stir the mixture until a thick dough forms and no dry cake mix remains, using a spatula to fold and scrape the sides of the bowl as needed.
  4. Gently fold in the sprinkles.
  5. Using a medium cookie scoop (about 1½ tablespoons), scoop the dough onto the prepared baking sheet, spacing the cookies 2–3 inches apart.
  6. Bake for 10–12 minutes, until the cookies are set. Remove from the oven and let cool on the baking sheet for 2 minutes.
  7. Transfer the cookies to a wire rack to cool completely.
