Lime Fluff Salad is a classic, old fashioned favorite that always shows up on the table when it’s time to celebrate. With its light, fluffy texture and subtle lime flavor, this sweet dish blends whipped topping, crushed pineapple, and sour cream into a smooth and creamy base. The addition of sweetened shredded coconut and fruity mini marshmallows gives it that nostalgic, colorful finish that makes it just as fun to look at as it is to eat.

It’s incredibly easy to make ahead, giving the flavors time to come together in the fridge. Recipe tips and substitution ideas:


  • Store the lime fluff salad in an airtight container in the refrigerator for up to five days, and avoid freezing as the texture won’t hold up well. For a stronger lime flavor, drain the crushed pineapple before adding it and mix in about two tablespoons of lime juice. If you’re not a fan of sour cream, you can substitute cottage cheese, but don’t omit it entirely without replacing it to maintain the creamy texture. 
  • While it can be served right away, letting it chill for a few hours or ideally overnight, allows the flavors to fully develop. You can also swap in regular mini marshmallows if you don’t have fruity ones on hand, and be sure to use the dry Jello powder rather than preparing it beforehand. Lemon Jello also works great in this recipe.

Lime Fluff Salad

This old fashioned lime fluff is light, fluffy, and full of tropical flavor. Easy to make ahead and always a crowd pleaser.

Ingredients

  • 1 (3 ounce) box lime Jello
  • 1 (16 ounce) tub whipped topping
  • 1 (20 ounce) can crushed pineapple, undrained
  • 1 cup sour cream
  • 2 cups fruity mini marshmallows
  • 1 cup sweetened shredded coconut
  • extra whipped topping, lime slices or wedges or marshmallows, for garnish, optional

Instructions

  1. In a large mixing bowl, combine the lime gelatin and whipped topping. Stir until fully blended and no white streaks remain.
  2. Add the crushed pineapple, sour cream, mini marshmallows, and coconut. Stir until everything is evenly combined.
  3. Cover and refrigerate for at least 2 hours, or overnight, until set and chilled.
  4. Garnish as desired before serving.
