We know of salads as appetizers, main dishes, and side dishes. What about a salad for dessert? 

Most would think I've gone overboard with healthy eating to suggest a salad for dessert. Until I tell them that my salad has bananas, cool whip, chocolate chips, nuts and all the ingredients of a banana split without the messy ice cream melting all over the place. 

The name for such a treat for the eyes and taste buds is the Banana Split Fluff Salad Dessert.

What is a fluff salad? A staple among recipes in the midwest, a fruit fluff salad is a creamy colorful concoction of sweet ingredients such as whip cream, marshmallows, canned fruit, gelatin, or even soda. 

While it may not look or taste like a traditional kale/ spinach combination with a vinaigrette, it is a blending of fruits, mixed with a dressing, that is served cold. So, technically, it is a salad. A family/kid friendly dessert salad that is a potluck and party favorite.

This cool whip dessert salad is not only creamy and sweet with bursts of fruit flavors, it magically maintains a crunch texture from the nuts and mini chocolate chips. The best part? Such a delicious banana dessert is one of the easiest!

Recipe tips:

  • This fluff is best if served within 4 to 6 hours as the bananas will brown and soften. Despite the softening of the fruit, this fluff remains edible if covered and refrigerated for up to 3 days. 
  • 3 cups of homemade sweetened whipped cream and be used instead of Cool Whip. The texture will be slightly different if using freshly whipped cream.

Banana Split Fluff Salad

Ingredients

  • 1 - 3.4 ounce box instant banana cream pudding
  • 1 - 20 ounce can crushed pineapple with juice
  • 1 - 10 ounce jar maraschino cherries without stems, drained and halved
  • 1 cup diced fresh strawberries
  • 1 cup miniature marshmallows
  • ½ cup chopped pecans or walnuts
  • ½ cup miniature chocolate chips
  • 2 bananas, halved and sliced
  • 1 - 8 ounce container Cool Whip, thawed

Instructions

  1. In a large bowl, mix the instant pudding with the crushed pineapple until blended.
  2. To the bowl, add the cherries, strawberries, marshmallows, nuts, chocolate chips, and bananas. Stir until well blended.
  3. Fold in half of the Cool Whip until evenly mixed. Then add the remaining Cool Whip, folding until combined.
  4. Refrigerate for at least 2 hours.
  5. Serve garnished with additional nuts, chocolate chips, and cherries if desired.
