Party Cupcakes are bright, colorful, and guaranteed to bring a smile to everyone's face. These fun cupcakes feature layers of neon blue, neon green, and neon pink cake baked right into each cupcake, creating a colorful surprise when you take a bite. Made with a simple cake mix and topped with homemade frosting and plenty of sprinkles, they're an easy dessert that's perfect for birthdays, celebrations, school parties, or anytime you want something extra fun.

These cupcakes are especially meaningful to me because my stepmom, who passed away last year, used to make them for all of her grandkids' birthday parties. Every time I make them, I'm reminded of those special celebrations and the sweet memories we shared. One of the best things about this recipe is how easy it is to customize. While I love the combination of neon blue, green, and pink, you can use any colors you like to match a holiday, sports team, school colors, baby shower, birthday party theme, or special event. With their vibrant layers and festive appearance, these cupcakes are always a hit with both kids and adults alike.

Recipe tips:


  • For the brightest colors, use gel food coloring rather than liquid food coloring, as it produces more vibrant colors without thinning the batter. When piping the colored batter into the liners, try to keep the layers even so each cupcake has distinct stripes of color when baked. Be careful not to overfill the liners, about halfway full is ideal to prevent overflowing.
  • Allow the cupcakes to cool completely before frosting, otherwise the frosting may melt and slide off. A zip top bag works great for piping frosting, but a piping bag with a decorative tip will give a more polished look. If you're making these for a themed party, coordinate the frosting and sprinkles with your chosen colors for an extra festive touch. Store the cupcakes in an airtight container at room temperature for up to two days or in the refrigerator for up to five days. They can also be frozen, unfrosted, for up to three months. Party Cupcakes

Party Cupcakes are colorful layered cupcakes topped with homemade frosting and sprinkles. A fun and festive dessert for birthdays and celebrations.

Ingredients

  • cupcakes:
  • 1 (15.25 ounce) box white cake mix, plus ingredients listed on box to prepare
  • gel food coloring (three different colors)
  • frosting:
  • 2 cups powdered sugar
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • sprinkles of your choice

Instructions

  1. Preheat the oven to 350°F. Line cupcake pans with paper liners.
  2. Prepare the white cake mix according to the package directions.
  3. Divide the batter evenly among three bowls. Add a different food coloring to each bowl and stir until the desired color is reached.
  4. Transfer each color of batter to a separate ziptop bag. Cut a small corner from each bag.
  5. Pipe a layer of the first color, about 1/2 inch thick, into each cupcake liner. Repeat with the second and third colors, filling each liner about halfway full.
  6. Bake according to the cake mix package directions, usually about 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and allow the cupcakes to cool completely.
  8. To make the frosting, beat together the powdered sugar, butter, vanilla extract, and milk with an electric mixer until smooth and creamy. If the frosting is too thick, add a little more milk. If it is too thin, add additional powdered sugar until the desired consistency is reached.
  9. Transfer the frosting to a ziptop bag or piping bag and cut a small corner from the tip.
  10. Once the cupcakes have cooled completely, pipe the frosting onto the cupcakes and decorate with sprinkles.
  11. Serve or store in an airtight container.
