- Charring the corn is worth the extra few minutes because it gives the salad the smoky, slightly sweet flavor that makes Mexican street corn so irresistible. Fresh lime juice also makes a noticeable difference, adding bright, fresh flavor that bottled juice simply can't match.
- If you have time, refrigerate the salad for at least 30 minutes before serving so the flavors have a chance to meld together. Store any leftovers in an airtight container in the refrigerator for up to 3-4 days.
Swaps and additions:

Street Corn Potato Salad
Take your potato salad to the next level with this Mexican-inspired twist on a classic favorite. Creamy, smoky, tangy, and packed with fresh flavor, it's perfect for barbecues, potlucks, taco nights, and summer gatherings.
Ingredients
- 2 pounds halved baby potatoes
- 1 1/2 teaspoons salt, divided
- 4 cups corn (fresh, frozen, thawed or canned, drained)
- 1 teaspoon black pepper
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 lime, juiced
- 1 cup cotija cheese
- 1/4 cup chopped cilantro
- Tajín for topping
Instructions
- Bring a large pot of water to a boil. Add the potatoes and one teaspoon salt, then cook until just fork tender, being careful not to overcook them or let them fall apart.
- Drain the potatoes and let them cool for 10-15 minutes.
- While the potatoes are cooking, add the corn to a skillet over medium-high heat. Cook for 5-7 minutes, stirring occasionally, until lightly charred. Remove from heat and let cool.
- In a medium bowl, whisk together 1/2 teaspoon salt, black pepper, chili powder, garlic powder, cumin, mayonnaise, sour cream, and lime juice until smooth and well combined.
- In a large mixing bowl, combine the cooled potatoes, charred corn, Cotija cheese, cilantro, and dressing.
- Gently toss until everything is evenly coated.
- Top with additional Cotija cheese, cilantro, and Tajín before serving.
