- Store leftover Cowboy Stew in an airtight container in the refrigerator for up to 3 days. To freeze, allow the stew to cool completely, then transfer it to freezer safe airtight containers or freezer bags. Freeze for up to 3 months. When you're ready to enjoy it, thaw the stew overnight in the refrigerator, then reheat it in a saucepan over medium heat or in the microwave until heated through. You can also reheat it directly from frozen on the stovetop over low heat, stirring occasionally and adding a splash of beef broth if needed.
Swaps and additions:
- If you can't find canned ingredients in the exact sizes listed in the recipe, don't worry, a few ounces more or less won't make much of a difference. You can also substitute a 10 ounce can of Rotel or Amazon brand for the diced tomatoes to add a little extra flavor. Try using ground turkey, chicken or pork instead of ground beef.

Ingredients
- 1 pound ground beef, browned and drained
- 2 cups beef broth
- 1 large onion, diced
- 1 green bell pepper, diced
- 1 (15.25 ounce) can kidney beans, drained
- 1 (15 ounce) can black beans, drained
- 1 (14.5 ounce) can diced tomatoes
- 1 (15.5 ounce) can whole kernel corn, drained
- 1 (6 ounce) can tomato paste
- 1 tablespoon chili powder
- 1 teaspoon paprika
- 2 teaspoons garlic powder
- 1 teaspoon cumin
- 1 teaspoon seasoned salt
- 1 teaspoon black pepper
- 1/2 teaspoon crushed red pepper
Instructions
- Add all of the ingredients to the slow cooker and stir until well combined.
- Cover and cook on HIGH for 4 hours or LOW for 6 hours.
