This recipe is interesting. The ingredients go together very well, and it would be something fun to even bring to a potluck or large family gathering. I had no idea what to make for dinner tonight and this was quick and easy to put together and pop in the oven. It would be fun to mix up the ingredients with what you have on hand. Next time I am going to throw some cooked bacon in.
What you need:
5-7 medium potatoes washed and sliced
1/3 c. red onion, diced
3 c. cooked chicken, diced
1/2 c. of your favorite BBQ sauce
2 c. grated cheddar cheese
1/2 c. sour cream
dash of oil to coat the bottom of baking dish
salt and pepper
Directions:
Wash and thinly slice potatoes. Grease bottom of 9x13 pan with olive oil. Place potatoes on the bottom of baking dish. Layer red onion and chicken. Season with salt and pepper. Add the BBQ sauce and sour cream and cover with the cheese. Bake in a 350 degree oven for 45 minutes to one hour or until potatoes are cooked through.
