Mini Meatloaves are a classic comfort food made even better by their quick cooking time and individual portions. Baked on a sheet pan instead of in a loaf pan, they cook evenly and develop a perfectly caramelized coating from the ketchup, brown sugar, and mustard glaze. Inside, they’re moist, flavorful, and tender thanks to a mixture of ground beef, cheddar cheese, milk, oats, and seasonings. The cheddar melts right into the meat, adding richness to every bite, while the oats help hold everything together and give the loaves that perfect homestyle texture.

These mini loaves are ideal for busy weeknights since they bake in about half the time of a traditional meatloaf and make serving so easy. Everyone gets their own little portion! They’re also great for meal prep, lunchboxes, or freezing for later. Pair them with mashed potatoes, dijon green beans, or a simple side salad for a balanced and satisfying dinner. The combination of savory beef, melty cheddar, and tangy sweet glaze makes these mini meatloaves a comforting favorite the whole family will love.

Recipe tips and substitution ideas:


  • Let the mini meatloaves cool completely before storing. Place them in an airtight container and refrigerate for up to 4 days. They reheat well in the microwave, oven, or air fryer. Just warm until heated through.
  • For longer storage, these meatloaves freeze beautifully. Freeze on a parchment lined baking sheet, then wrap each one individually in plastic wrap, then place them all in a freezer safe bag or container. They’ll keep for up to 3 months. To reheat, thaw overnight in the fridge or bake directly from frozen at 350°F for 25-30 minutes, adding a bit of extra sauce or cheese on top if desired.
  • To add some spice, mix a pinch of cayenne pepper, crushed red pepper flakes, or use jalapeño ketchup instead of regular ketchup. For a lower sugar option, try reduced sugar ketchup and a brown sugar substitute, it keeps the same tangy sweetness. You can swap the ground beef for turkey, chicken, or pork, or mix in finely diced bell peppers, mushrooms, or shredded carrots for extra flavor and moisture. Use any cheese you have on hand, cheddar, mozzarella, pepper jack, or even Swiss all work great. For an extra savory boost, stir in a dash of Worcestershire sauce, balsamic vinegar or soy sauce.

Mini Meatloaves

Each little loaf is packed with ground beef, cheddar cheese, oats, and seasonings for a hearty, satisfying meal that’s ready in under 30 minutes. They’re great for busy weeknights, meal prep, or serving to a crowd since everyone gets their own perfectly portioned meatloaf.

Ingredients

  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • ½ cup finely chopped onion
  • ½ cup quick oats
  • 1 egg
  • 1 teaspoon seasoned salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 pound lean ground beef
  • 2/3 cup ketchup
  • ½ cup brown sugar
  • 1 tablespoon yellow mustard

Instructions

  1. Preheat the oven to 350°F. Grease a large baking sheet with nonstick cooking spray and set aside.
  2. In a large mixing bowl, combine the cheddar cheese, milk, onion, oats, egg, seasoned salt, black pepper, and garlic powder. Add the ground beef and mix gently until just combined, do not overmix.
  3. Divide the meat mixture into 8 portions and shape each into a small loaf. Place the mini meatloaves on the prepared baking sheet.
  4. In a small bowl, whisk together the ketchup, brown sugar, and mustard. Spoon the sauce evenly over each meatloaf, covering the tops and sides completely.
  5. Bake for 25-30 minutes, or until the centers are no longer pink and the internal temperature reaches 160°F. Remove from the oven and let rest for a few minutes before serving.
