Raspberry Cranberry Sauce

Yield: 4 servings

  • 1 1/3 cup sugar
  • 1 cup water
  • 3 cups fresh cranberries
  • 1 cup frozen raspberries
  • 1 teaspoon vanilla extract, optional

  1. Combine all ingredients in a medium size saucepan.
  2. Bring to a boil, reduce heat and simmer for 10 minutes or until mixture starts to thicken, stirring frequently.
  3. Using a potato masher, mash the cranberries until you reach the consistency you like. I leave about half my berries whole, and half mashed.
  4. Cook for another 3-5 minutes. Remove from heat, cool and serve!
