I introduced Morey's back in January and shared this wonderful Lemon Parmesan Salmon Burger! Morey's is a well known name in Minnesota and across the nation! They're located about an hour north of me and they offer some amazing fish and seafood! You can find their products at a grocery store near you! I really love Morey's products- their flavors are very unique and the quality is wonderful.

Morey's Pineapple Mango Mahi Mahi is a new favorite at our house! It's sweet and savory, gluten free and ready in less than 30 minutes! The marinade is a great match for Mahi Mahi and it goes perfectly with the Cilantro Lime Rice, Fresh Mango Salsa and Black Beans! Each bite is fresh, and packed with tons of flavor. This recipe is perfect for 2 people and is great for lunch or dinner! This is one recipe I will be making often! Time to skip the restaurant and make your own at home!


Pineapple Mango Mahi Mahi Cilantro Lime Rice Bowls with Fresh Mango Salsa and Black Beans

Ingredients
  • 1- 10 ounce package Morey's Pineapple Mango Mahi Mahi
  • 1- 15 ounce can black beans, drained and rinsed
  • cilantro lime rice:
  • 1 teaspoon olive oil
  • 2/3 cup long grain white rice
  • 1 cup water
  • 1/2 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped
  • mango salsa:
  • 1 cup tomatoes, diced
  • 3/4 cup mango, diced
  • 1/2 cup red onion, diced
  • 1/2 cup orange bell pepper, diced
  • 1/4 cup Anaheim chile, diced
  • 2-3 cloves garlic, minced
  • 1/2 cup corn
  • 2 tablespoons cilantro, chopped
  • fresh lime juice, to taste
  • salt and pepper, to taste
Instructions
Bake or grill Morey's Pineapple Mango Mahi Mahi according to package directions.
For the rice: Heat the olive oil in a saucepan over medium heat. Add rice and lime juice and stir for one minute. Add water and salt, bring to boil.
Cover and simmer on low until rice is tender and liquid is absorbed. Add more liquid during cooking if needed. Remove from heat and stir in cilantro.

For the salsa:
Combine all ingredients in a bowl. Refrigerate any leftovers.
Scoop the rice into the bottom of a shallow bowl. Top with mahi mahi, salsa and black beans. Serve immediately. 2 servings.
