One pot meals are always a winner at our house and there are so many different ways you can make them! 

We use pastas, rice, make them with meat or vegetarian, make them creamy and cheesy or just saucy. I love adding Mexican or Italian flavors depending on ingredients and most of them are ready in less than 30 minutes, which is great for those busy evenings!

I especially love this One Pot Sausage, Sun Dried Tomato and Basil Pasta!

The flavors are perfect together and the best part? I had all the ingredients in my fridge and pantry.

Anyone can make this easy recipe and it's super easy to switch up sauces, cheeses and vegetables depending on what you like or what you have in your kitchen.

We had enough for dinner, and also some leftover. The leftovers tasted just as good as when it was freshly made making it great for lunch the next day.

What is in One Pot Sausage, Sun Dried Tomato and Basil Pasta?


  • Fresh Basil: Also called sweet basil and is an annual herb in the mint family. It's a great source of vitamin k, vitamin a, magnesium and iron. It has a sweet smell with a peppery taste.
  • Garlic: My love for garlic is real. I use it in almost everything I cook and I love the health benefits it offers. Garlic is part of the onion, leek and chive family. It's great for heart health and contains many vitamins and minerals.
  • Heavy Cream or Whipping Cream: Heavy cream and heavy whipping cream are pretty much the same thing. Both must contain at least 36% or more milk fat. Heavy cream will whip better and hold its shape longer than whipping cream. Whipping cream, or light whipping cream, is lighter and contains around 30-35% milk fat. A common use for whipping cream is making a whipped topping for desserts. It is also used as an ingredient in recipes for soups, sauces and beverages.
  • Onion: The onion is a vegetable that is the most widely cultivated species of the genus Allium. It's relatives include the garlic, shallot, leek, and chive. Onions contain antioxidants, red onions have the highest antioxidant amount.  Onions produce the chemical irritant known as syn-propanethial-S-oxide. This irritant floats up from the chopped onion and causes tears. Chill the onion prior to chopping to reduce irritation.

  • Heat the olive in a skillet
  • Add the sausage and saute
  • Add the onion and garlic, cook until onion is tender
  • Add the broth, marinara sauce, cream, tomatoes, salt, pepper and spaghetti

One Pot Sausage, Sun Dried Tomato and Basil Pasta

Yield: 4 servings

Ingredients:

  • 1 tablespoon olive oil
  • 12 ounces Italian sausage, sliced (I used roasted garlic chicken sausage)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 1/4 cups chicken broth
  • 1 cup marinara sauce
  • 1/2 cup heavy cream
  • 1/3 cup sun dried tomatoes, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 ounces dry spaghetti, broken into thirds
  • 1/4 cup fresh basil, chopped
  • 1 1/2 cups shredded mozzarella cheese, divided

Instructions:

  1. Heat the olive in a large non stick skillet over medium high heat.
  2. Add the sliced sausage and saute until browned. Add the onion and garlic, cook for 5 minutes, until onion is tender.
  3. Add the broth, marinara sauce, cream, tomatoes, salt, pepper and spaghetti to the pan. Stir well and cover.
  4. Turn the heat to medium low, cook for 15-20 minutes, until pasta is cooked through, stirring once.
  5. Add the basil and 3/4 cup mozzarella cheese, stir. Cook covered for 2-3 minutes, then sprinkle the remaining mozzarella on top.
  6. Cover, remove from heat and let set for 5 minutes before serving.
