My summer has been pretty fantastic so far!

I've spent my time the last couple weeks celebrating my birthday, eating delicious BBQ, boating on the lake in northern MN, drinking mojitos and shopping at garage sales!

This is my absolute favorite time of year and since warm weather doesn't last very long in MN, I try to take full advantage of it.

My daughter is also out of school since Friday, so I'm especially excited to spend the summer with her!

I'm so blessed that I'm able to take her to work with me to participate in our youth programs at the non-profit. It makes summertime that much better!

Today's recipe is a perfect one to add to your summer BBQ menu! Not only is it good for the grill, but also great for the oven when those cooler temps come back around this fall.

These foil pack potatoes are full of bacon-y, cheesy goodness!

The potatoes are super tender, and the onions melt in your mouth!

Now, this recipe is pretty naughty with all the cheese, bacon and bacon grease, but everything in moderation, folks! It's worth the splurge and extra trip to the gym! 😉

These potatoes are wonderful for dinner, but give them a try for breakfast too! Especially if you're camping!

I love serving them with a fried over medium egg on top, but scrambled eggs on the side are also fantastic.

I usually fry a whole pound of bacon at a time, then use it throughout the week with recipes like this, grilled cheese, club sandwiches or pasta salads!

It's such a timesaver to make ahead and adds so much flavor to anything you add it to!

Grill or Oven Cheesy Bacon Foil Pack Potatoes

Yield: 4 servings

Ingredients

  • 1 1/2 tablespoons bacon drippings or melted butter, divided
  • 5 red potatoes, peeled and sliced
  • 1 medium onion, halved and sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded cheddar cheese
  • 4 strips bacon, cooked and crumbled
  • 1/2 tablespoon fresh parsley, chopped

Instructions

  1. Preheat oven to 375 degrees, if using.
  2. On a large piece of aluminum foil, evenly grease the bottom with bacon drippings or butter.
  3. Place potatoes on foil first, then the onions. Season evenly with salt and pepper, then pour remaining drippings or butter over top.
  4. Sprinkle cheddar, then bacon over top of the potatoes and onions.
  5. Seal foil pack by folding over top, then folding each edge.
  6. Bake in the oven or grill for 30 minutes, or until potatoes are tender. Sprinkle with parsley.
