Using a boneless turkey breast makes this recipe incredibly simple, whether you're hosting a smaller Thanksgiving gathering, planning Christmas dinner, or just craving a cozy, comforting meal. The turkey slowly cooks until it's tender and juicy, and the cooking liquid transforms into the most delicious creamy sun dried tomato parmesan sauce. Serve it with mashed potatoes, rice, pasta, or your favorite holiday side dishes to soak up every last bit of that amazing sauce. This is definitely one of those recipes that looks and tastes fancy but is surprisingly easy to make!

Recipe tips:
- For the best results, look for a boneless turkey breast roast that's around 3-4 pounds and make sure it's completely thawed before placing it in the slow cooker. If your turkey comes wrapped in netting, check the package directions to see whether it should remain on during cooking to help hold its shape.
- Since turkey breast is a lean cut of meat, I recommend cooking it on LOW rather than HIGH to help keep it tender and juicy. Start checking the internal temperature around the 4 hour mark using an instant read thermometer inserted into the thickest part of the turkey. It should reach 165°F, and you don't want to cook it any longer than necessary.
- For the creamiest sauce, wait until the turkey is finished cooking before adding the heavy cream and Parmesan cheese, since dairy can separate when cooked for several hours. I prefer using oil packed sun dried tomatoes because they're softer and more flavorful, but be sure to drain off most of the excess oil first. Freshly grated Parmesan also melts much more smoothly than pre shredded cheese. Add the fresh spinach toward the end of cooking since it only needs a few minutes to wilt in the hot sauce.
- Allow the turkey to rest for about 10 minutes before slicing to help keep those delicious juices inside. If your sauce is already thick enough after adding the Parmesan, feel free to skip the cornstarch slurry. If it becomes too thick, simply stir in a splash of chicken broth or heavy cream until it reaches your desired consistency.
Swaps and additions:
- If you can't find a boneless turkey breast, you can use a bone in turkey breast or boneless chicken breasts instead, adjusting the cooking time as needed and making sure the poultry reaches an internal temperature of 165°F. Pork tenderloin is also a good option.
- For the creamy sauce, you can substitute half and half for heavy cream, although the sauce may be slightly thinner and less rich. Swap the Parmesan cheese for freshly grated Romano or Asiago cheese for a slightly different flavor. If you don't have sun dried tomatoes, try roasted red peppers for a sweeter, milder flavor. You can also replace the fresh spinach with chopped kale, giving it a little extra time to soften.
- For even more flavor, add sliced mushrooms, diced onions, or shallots to the slow cooker with the turkey. Fresh basil, thyme or rosemary are wonderful additions, especially for a holiday meal. If you like a little heat, sprinkle in some crushed red pepper flakes. You can even stir in a spoonful of basil pesto or a splash of fresh lemon juice at the end to brighten up the creamy Parmesan sauce!

Slow Cooker Marry Me Turkey
This easy Slow Cooker Marry Me Turkey combines tender boneless turkey breast with garlic, Italian herbs, sun dried tomatoes, spinach, and a creamy Parmesan sauce. It's an impressive, comforting holiday meal that requires minimal prep and lets your slow cooker do most of the work!
Ingredients
- 1 (3-4 pound) boneless turkey breast, thawed
- 2 tablespoons butter, softened
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 4 cloves garlic, minced
- ¾ cup chicken broth
- ½ cup chopped sun dried tomatoes packed in oil, drained
- ¾ cup heavy cream
- ¾ cup freshly grated parmesan cheese
- 2 cups fresh baby spinach
- 1 tablespoon cornstarch
- 1 tablespoon cold water
- fresh basil or parsley, chopped for garnish
- additional parmesan cheese, for garnish
Instructions
- Pat the turkey breast dry with paper towels and place it in a 5 or 6 quart slow cooker.
- Rub the softened butter evenly over the turkey breast. Season all over with salt, black pepper, garlic powder, and Italian seasoning.
- Sprinkle the minced garlic over and around the turkey breast. Pour the chicken broth into the slow cooker, then add the drained sun dried tomatoes over and around the turkey.
- Cover and cook on LOW for 4-6 hours, or until the thickest part of the turkey breast reaches an internal temperature of 165°F. Begin checking early, as cooking times may vary depending on the size and thickness of the turkey breast.
- Carefully transfer the cooked turkey breast to a cutting board or serving platter. Loosely cover with aluminum foil and allow it to rest while preparing the sauce.
- Turn the slow cooker to HIGH. Stir the heavy cream into the cooking liquid, then add the Parmesan cheese and stir until melted and combined.
- Add the fresh baby spinach and stir until it begins to wilt.
- In a small bowl, whisk together the cornstarch and cold water until completely smooth. Pour the cornstarch mixture into the slow cooker and stir to combine.
- Cover and cook on HIGH for 10-15 minutes, or until the sauce is hot, creamy, and thickened enough to coat the turkey.
- Slice the rested turkey breast into thick, even slices and arrange on a serving platter.
- Generously spoon the creamy sauce, sun dried tomatoes, and spinach over the sliced turkey. Garnish with fresh basil or parsley and additional Parmesan cheese before serving.
