Penne Pasta with Vodka Basil Sauce Recipe

Hello!  It's Shannon again.... I hope you enjoyed Monday's Noodles and Company Inspired Parmesan Crusted Chicken recipe!  We served that over a delicious Penne Pasta with Vodka Basil Sauce.  I love basil with just about everything so the addition of this to a traditional vodka sauce made this meal completely mouth-watering!!!  It's taken me a long time to tweak it to perfection so I hope you truly enjoy it as much as we do!!!  I also used heavy whipping cream along with half and half instead of all heavy whipping cream so that it's not quite as naughty. :)



 
Penne Pasta with Vodka Basil Sauce (click here to print recipe)

What you need:
1/2 medium yellow onion, chopped
6 cloves of garlic, chopped
olive oil
1/2 cup vodka
1- 28 ounce can of whole plum tomatoes
2 small cans of tomato paste
1 pint heavy whipping cream
1 pint half and half
1 container of fresh basil (about 1 ounce)
1 stick of butter
1/2 cup grated parmesan cheese
1/2 teaspoon salt
Pepper to taste
penne pasta, cooked according to package directions

Directions:
In a skillet, cook the onion and garlic in olive oil until soft.  Push the onions and garlic to the sides of the skillet and pour the vodka in and allow it to cook off which takes a couple minutes.  Drain and rinse the canned plum tomatoes making sure all the seeds are rinsed out.  Dice them into smaller pieces and add to the skillet.  Add the cream, half and half, tomato paste, salt and pepper, and stir all ingredients until combined and hot.  Rinse and chop the basil and add to sauce.  Add the parmesan cheese and butter and stir until butter is melted.  Simmer over low heat for approximately 30 minutes, stirring occasionally to prevent scorching.  Serve over penne pasta and top with my Noodles and Company Inspired Parmesan Crusted Chicken!  Enjoy!
