We're gearing up for our first 90 degree day of the summer here in Minnesota, and with that tropical heat on the way, I thought it was the perfect time to share a fruity, savory salsa recipe!  

I originally made this salsa back in February to pair with some shrimp sliders, and it was such a hit that I knew it deserved a spotlight of its own. It’s sweet, savory, super easy to throw together, and perfect with tacos, chips, or even grilled chicken and fish. I’m a big fan of sweet and savory combos, and this one totally delivers. You can also switch things up by adding jalapeños, black beans, or corn. Fresh salsa is so fun to customize!

My 9 year old, Ella, is surprisingly into fresh salsas, especially anything with red onion and tomatoes. She’s usually a bit picky, but I’ve found she’s much more likely to try something if she helps make it. She’s become my little kitchen sidekick and loves chopping veggies with me. It’s a fun way to spend time together and encourage her to try new foods!

Recipe tips and substitution ideas:


  • Frozen avocado can be used in this salsa. Let frozen avocado thaw at room temperature for 30 minutes, or until it's soft enough to chop. Keep in mind that thawed avocado may be a bit softer in texture, which can affect the consistency of your salsa.
  • Good substitutes for Anaheim peppers include poblano peppers for a similar mild heat and slightly earthy flavor, or bell peppers if you want a no heat option. For a bit more spice, try cubanelle or jalapeño peppers, adjusting the amount based on your heat preference.

Pineapple Avocado Salsa

A bright and tasty blend of sweet and savory flavors, perfect for any occasion! Serve it with chips or as a flavorful topping for tacos, shrimp, chicken, or fish—an ideal complement to your favorite Mexican-inspired dishes!

Ingredients

  • 2 ripe avocados, diced
  • 1 cup diced fresh pineapple
  • 1/4 cup finely diced red onion
  • 2 tablespoons chopped cilantro
  • 1 lime, juiced
  • 1/2 cup diced Anaheim pepper
  • salt and black pepper, to taste

Instructions

  1. Combine all ingredients in a bowl. Serve immediately.
