Today's recipe comes from an old church cookbook I picked up at a garage sale a few years ago! I absolutely love old cookbooks with recipes submitted from people in the community.

I've found so many favorites over the years from cookbooks like that and this candy recipe is now a new favorite for us! I made them and shared with some co-workers and everyone loved them and wanted the recipe.

With most of these old recipes, you usually see margarine or oleo listed in the ingredients. I always swap out with butter since we don't use margarine and most of them turn out great!

This Butterscotch Marshmallow Candy is sweet and SO good! It's no bake, only four ingredients and super simple to make. 

There is also peanut butter in this recipe, which gives it an even richer, buttery flavor. I absolutely love the texture of the marshmallows with the velvety butterscotch mixture. Each bite is perfection!

This recipe makes a lot of small, bite sized pieces, so they're perfect for parties, gifting for Christmas or when you need something sweet to eat.

Recipe tips:


  • Be gentle when spreading the mixture in the casserole. You want the marshmallows to retain their shape as much as possible.
  • This candy will soften when it gets warm. Keep refrigerated until serving.

Butterscotch Marshmallow Candy

Ingredients

  • 1 - 11 ounce package butterscotch chips
  • 1 cup peanut butter
  • 1 stick of butter (½ cup)
  • 2 cups miniature marshmallows

Instructions

  1. Grease an 8x8 inch casserole dish with butter.
  2. Place chips, peanut butter and butter in a microwave safe bowl. Microwave, stirring every 30 seconds until chips are melted and mixture is smooth.
  3. Stir in the marshmallows until coated, then pour into the greased casserole dish. Spread evenly.
  4. Refrigerate until cool, then cut and serve.

Notes

Be gentle when spreading the mixture in the casserole. You want the marshmallows to retain their shape as much as possible.
