Marinated Tomatoes are one of the simplest ways to turn fresh tomatoes into something truly special. Juicy Roma tomatoes are tossed in a flavorful mixture of olive oil, seasoned rice vinegar, fresh parsley, garlic, salt, black pepper, and a touch of crushed red pepper. As the tomatoes sit, they soak up all of those bright, savory flavors, creating a fresh side dish that tastes like summer.
I make some version of this tomato salad at least a couple of times a week, especially when tomatoes are in season. It’s one of those easy recipes that goes with just about everything and never gets old. Serve marinated tomatoes alongside grilled meats, spoon them over toasted bread, add them to salads, or enjoy them straight from the bowl. With minimal ingredients and almost no prep work, this dish proves that simple recipes are often the most memorable.

Recipe tips and substitution ideas:
- For the best flavor, let the tomatoes marinate for at least 30 minutes before serving so they have time to absorb the dressing. Use ripe, flavorful tomatoes whenever possible, as they are the star of the recipe. I do not recommend storing this salad for longer than 24 hours because the tomatoes tend to soften and develop a slightly gritty texture. This recipe is also not suitable for freezing, as the tomatoes will become mushy once thawed.
- This recipe is easy to customize based on your tastes. If parsley isn’t your favorite herb, try fresh basil, cilantro, or even mint for a different flavor profile. Cherry or grape tomatoes work wonderfully, but almost any variety of tomato can be used. You can swap the seasoned rice vinegar for lemon juice, lime juice or balsamic vinegar, add extra seasonings to suit your taste, or include ingredients like sliced cucumbers, red onions, or fresh mozzarella for a heartier salad.

Marinated Tomatoes
Juicy tomatoes soak up olive oil, vinegar, herbs, and seasonings for a bright, refreshing salad. Perfect for summer dinners, cookouts, and gatherings.
Ingredients
- 2 tablespoons olive oil
- 1 tablespoon seasoned rice vinegar
- 2 tablespoons minced fresh flat leaf parsley
- 1 teaspoon minced garlic
- ¼ teaspoon salt
- 1/4 teaspoon black pepper
- pinch of crushed red pepper
- 1 pound roma tomatoes, cut into bite sized pieces
Instructions
- In a medium mixing bowl, whisk together the olive oil, rice vinegar, parsley, garlic, salt, black pepper, and crushed red pepper until well combined.
- Add the tomatoes and toss gently until evenly coated in the dressing.
- Cover and refrigerate for 30 minutes to allow the flavors to meld.
- Stir gently before serving.
