I'm seriously addicted to baby heirloom tomatoes right now. Sam's Club has them available all the time in a 2 pound bowl, and we pretty much always have them on hand these days. They're about as close to summer tomatoes you can get this time of year in MN, and they're so perfect for snacking or fun and delicious recipes!

Who loves breakfast for dinner? It's seriously my favorite time to eat breakfast foods since I'm so lazy and end up waking up at the last minute every morning! This Breakfast Flatbread Pizza is perfect for breakfast anytime of the day. It's fast, ready in less that 10 minutes and SO tasty!

I also love that you can use any toppings you have on hand. I would love to try it with Canadian bacon, mushrooms, tomatoes or havarti cheese. The possibilities are endless! The key to this recipe is to make sure you slice the veggies very thin, that way they cook while broiling! We loved them! Pita flatbread makes a great thin crust personal sized pizza! This Chicken Broccoli Alfredo one was delicious, as well as these Cheese Garlic Flatbread Breadsticks! Make sure to give them a try! Enjoy!

Breakfast Flatbread Pizza

Ingredients (1 pizza)
  • 1 pita flatbread
  • 1/2 cup shredded cheddar cheese
  • 1 egg, scrambled
  • 2 sausage links, cooked and crumbled
  • 6 pieces green pepper, thinly sliced
  • 10 pieces onion, thinly sliced
Instructions
Preheat oven broiler.
Place pita flatbread on a baking sheet. cover evenly with shredded cheddar. Then add scrambled egg and cooked sausage, spreading in an even layer. Top with slices of green pepper and onion.
Broil for 4-5 minutes until cheese is melted and veggies are tender. Cut into triangles and serve!

When shopping for a book, whether online or in person, I glance at the cover, but it's usually the description that draws me in. I knew instantly when I read the description for Soul Sessions while book shopping online, that this book was one that I would love and be very interested in!

During the winter my favorite place to relax and read a book is on the couch, but now that's nice outside I love reading on my front porch with a mug of chai tea! Normally it's too cold this time of year to even sit on the porch, but we've been lucky with beautiful warm weather these last few weeks, so I had to take advantage and spend some reading time outside!


Soul Sessions is a really deep and thought provoking book. I've been interested in reading about things like past lives, soul mates, and past life regressions before, always non-fiction, but this novel turned out to be my favorite out of all of them so far! Nick is someone most of us can relate to at some point in our lives. Depression is so common with a friend or family member, or even yourself. I know I went through some rough times after a bad car accident I was in. Sometimes that rough patch in our lives happens, but then we can thrive and learn from that bad experience and be better people in the end.

And soul mates, I think there is one out there somewhere for everyone. Those who haven't found theirs, always seem to be on the search, with somewhat similar relationship experiences like Nick. There's always something there that leaves you wondering is this person right for me. Once you've found that person, you'll no longer wonder. 

I really learned alot from this book and felt certain parts were totally relate-able for me. The past life regression sessions impacted me the most. Particularly how his past life events were so connected with his present life and the amazing stories of the people who he was in a past life. I also thought it was totally interesting that birth marks are supposed to be a mark from where we died in our past life. It really makes you wonder, what if?

One of my favorite parts was at the end when everything came together regarding the accident on his way to the airport. That was definitely the climax and brought everything together that I had read so far. 

This book is one I had a hard time putting down. It draws you in from the first chapter, and you may stay up late trying to finish to see what happens. As a reader, there is alot to learn from this book. Whether this is a subject that you believe in or not, there is something everyone can gain from reading Soul Sessions. It's thought provoking, which I love when a book challenges me and gets me thinking. It's also one that will leave you with questions such as... Do we have multiple lives? or What happens after we die?

If I had to choose any one sandwich to make, I'd definitely choose a ham sandwich. I love a basic ham sandwich on some bread, or a loaded ham sandwich like the one I'm sharing today! Ciabatta rolls are so great for sandwiches, I just love the flavor they have. I found these ones at my local Aldi and they were such a great deal!

How many of you love one pot pasta recipes? I sure do! They are easy, flavorful and on the table within a half hour! Definitely our kind of meal here at Hot Eats and Cool Reads!


This Beefy Black Bean Taco One Pot Pasta has tons of taco goodness all in one bowl! It's saucy, filling and with all these flavor components, a great meal! Black beans are my favorite, so I had to add some of those in and I topped it off with some sliced green onions!

Simple Roasted Radishes and Red Onions Recipe

A delicious and unique side that will have you wanting more! If you've never tried these before, make sure to add them to your menu!



Roasted radishes.... different right? Over the years I've seen a few roasted radish recipes floating around, but have never tried them. Growing up, we always ate them raw sprinkled with some salt. When you roast them, they take on a completely different flavor and are way more mild. 

My eight year old is one of those kids who never wants to try anything new. Matter of fact, she eats her favorites almost everyday. This girl loves salad with tomatoes and red wine vinaigrette, steak, grapefruit, fresh berries, spaghetti and cinnamon sugar toast. Well, I bribed her into trying the roasted radishes, and guess what? She LOVED them. Like seriously, ate 3/4 of the recipe and surprised the heck out of me!! She's been asking for them ever since!

We both really loved them and will be putting them on the menu quite often! The radishes and red onions have an incredible flavor when roasted together. They would also be great in a foil pack on the grill this summer sliced with some potatoes, garlic and zucchini.

Simple Roasted Radishes and Red Onions

Ingredients (2-3 servings)
  • 2 tablespoons melted butter
  • 1 pound medium sized radishes, ends trimmed and halved
  • 1 medium red onion, sliced
  • 1/2 teaspoon steak seasoning
  • salt and pepper, as needed
Instructions
Preheat oven to 400 degrees.
Combine all ingredients in a bowl. Pour evenly onto a baking sheet lined with aluminum foil. Bake for 35-45 minutes, stirring every 15 minutes.

Have I ever explained how much I love muffins? They are perfect for the non baker like me. Stick with one base recipe, and add in pretty much any fruit, chips or nuts and end up with breakfast or snack for the family for the next couple days. They're pretty hard to mess up, and bake up fast, which is great! 

My base recipe came from my Junior High home ec class! Would you believe I still have the original paper with the recipe in my recipe stash? Craziness! Not sure why I ever kept it, but I'm so glad I did! They really couldn't be more easy to make!

I can't even lie. Garlic bread is one of my absolute favorites! I love it dipped in marinara and could easily eat way more than a serving.

Plus, it takes alot off cooking and prep time, which is great for our family! I need time savers whenever possible without sacrificing flavor!

I don't know about you, but I love me some portobello mushrooms! They are so flavorful and so beefy tasting. I love even more, stuffing them full of cheesy spinach artichoke goodness! My friend Stacy and I were wanting something totally different for dinner this weekend, so that's how these amazing stuffed mushrooms were created! Of course the kiddos wouldn't go near them, so we took the easy way out and served them some mac and cheese instead. Not like they were too concerned about eating anyway, Minecraft on the ipads had their attention for the evening!
