I know all of you can relate... fierce Mexican food cravings. A visit to the local Mexican restaurant wasn't enough to satisfy my craving, so I whipped up a new and fast recipe at home to complete my two day Mexican food feast!

Recipes like these aren't truly Mexican, more like Tex-Mex, but still very delicious! 

I was browsing through an old church cookbook and stumbled across the recipe that inspired this one. A Tostada is basically a crunchy corn tortilla that's loaded with any toppings you love. We used ground beef and refried beans for this one. 

My family always has ground beef in the freezer that we buy in bulk from our favorite meat market, so the rest of the ingredients came from the fridge and pantry after my Aldi trip last week.

These tostadas are done in 15 minutes, from start to finish. I prep all my toppings while the beef is browning, then assemble after the beef and bean mixture is done. I used canned refried beans, but if you make your own from scratch, definitely use them instead! 

Traditionally, you bite into a tostada like a piece of pizza, but I prefer using a fork and breaking it into pieces to eat it.

This meal is filling and super reasonable to make. This will be going into the regular recipe rotation!

Recipe tips:

  • The beef and bean mixture can be made ahead of time and refrigerated for up to three days. Reheat the beef and bean mixture in a skillet or microwave and assemble tostadas as directed. You can also reheat in a slow cooker, then serve it at a party or any gathering for your own taco, nacho or tostada bar. 
  • These can be made vegetarian. Skip the ground beef and double the amount of seasonings and beans for a meatless meal.

  • Ground chicken or turkey instead of beef
  • Homemade refried beans instead of canned
  • Canned black beans instead of refried beans. Add whole beans or mashed.
  • Add diced jalapeno to the ground beef while browning

Ingredients

Instructions

  1. Heat a large skillet over medium high heat.
  2. Add the ground beef, onion, and garlic and brown until ground beef is no longer pink. Reduce heat to medium.
  3. Stir in the cumin, chili powder and pepper. Then add refried beans. Stir to combine and heat through, about 4-5 minutes.
  4. Spread beef and bean mixture onto a tostada, then top with toppings of your choice. 
  5. We used cheddar cheese, lettuce, tomato, red onion and cilantro. 
  6. Serve immediately.

Notes:

The beef and bean mixture can be made ahead of time and refrigerated for up to three days. Re-heat the beef and bean mixture in a skillet or microwave and assemble tostadas as directed.

It's such a gorgeous Thursday evening here in central Minnesota! We spent some time at the pool today with friends and I can't wait to relax and watch some Hulu after this post! We've also been spending lot of time exploring our neighborhood these last few weeks! My daughter and I walk and ride bike almost every day and we are so fortunate to have the pool and park less than 4 blocks away! It makes summertime extra fun when there is so much to do, so close by.

How many of you have tried rainbow carrots before? I LOVE them! There's just something exciting about eating carrots that are other colors besides orange! It may just be the dorky foodie in me, but they are so fun! I bought some at Trader Joes, and most recently received a bag of them in my fruit and vegetable basket from Bountiful Baskets! If you haven't heard of Bountiful Baskets, you should really check out their website and see if they have pick up sites in your area! You pay a basket contribution fee and on pick up day, you receive your basket with 50% fruits and 50% veggies! It's so awesome!
