Soup season is in full swing at our house! LOVE this time of year!


Today's recipe is so delicious, light and filling! 

It's also meatless which makes it frugal, but if you have a family of meat eaters, definitely add some chopped cooked chicken breast to the pot! 

My daughter isn't much of a meat eater, so this was one recipe she really enjoyed. She finished two full bowls the night I made it, then ate another one the next day. Definitely kid approved!

Breakfast is my absolute favorite meal of the day and I can't start my day without eating something good. The majority of weekdays are rushed when we're out the door to work and school, and the afternoons and evenings are busy and active as well. We have piano lessons, Girl Scouts and everything else in between, so it takes some creativity to eat good meals and snacks when on the go.

Confession... I'm a huge fan of fried fish. 

Minnesota is known for it's 10,000+ lakes and with all those lakes, comes some pretty amazing fish. I spent a weekend on the boat with my brother at the cabin this summer and enjoyed every minute of it. 

I'm pretty sure it was totally laugh-worthy with me singing "Hey fishy fishy" every 5 minutes when I got another bite on the line. 

While this recipe doesn't use fresh fish from the lake, it's still quite amazing! 

Tilapia is our go-to fish when we don't have lake fish available. It's reasonable and very easy to cook with. You can use any white fish you prefer with this recipe and it will still turn out perfect every time.

The panko breadcrumbs add a crispy breading to the fish when fried and it's great for these fish sandwiches! 

In the short amount of time it takes to actually fry the fish, you can have the entire meal ready within 20 minutes! 

You already know quick and easy is the theme around here, so this recipe fits right in with the rest! 

We add tomatoes, red onion and spinach, along with some tartar sauce for the perfect sandwich! A slice of cheddar cheese or american cheese is delicious too if you wish to add that.

Easy Fried Fish Sandwich

Yield: 4 sandwiches

  1. Heat the oil in a skillet to medium high heat.
  2. In a shallow dish, combine panko,  flour and lemon pepper.
  3. Whisk the egg in a separate dish.
  4. Once oil is fully heated, dip the fish in the egg mixture, then coat the fish with the panko mixture and add to frying pan. Cook for 3 minutes on the first side, then flip and cook an additional 2-3 minutes until golden brown. Transfer to a paper towel lined plate.
  5. Assemble sandwiches and serve immediately.
